Home-canned fish is one of the best-kept secrets in preserving. Shelf-stable salmon that rivals or beats canned commercial product, at a fraction of the per-pound cost — especially if you catch your own or buy whole fish at wholesale during summer runs. The catch: fish is a low-acid food, meaning it MUST be pressure canned (not water bath). Get the technique right and you have 2-5 years of shelf-stable salmon, tuna, or trout in the pantry.
This guide walks through canning salmon, tuna, mackerel, and other fish with proven-safe methods, the pressure canner requirements, and the pack style decisions that affect final quality.
Why pressure canning is mandatory for fish
Fish is a low-acid food (pH >4.6). At water bath temperatures (212°F), the botulism bacterium Clostridium botulinum can survive and reproduce in low-acid canned food. Pressure canning at 240°F for the specified time kills botulism spores. There is no safe water-bath method for fish — this rule is non-negotiable.

Equipment
- Dial-gauge or weighted-gauge pressure canner: minimum 16-quart capacity for practical batches. See our best pressure canners guide.
- Wide-mouth mason jars, 1/2-pint or pint size: quart jars are NOT approved for fish canning — heat penetration inadequate.
- New lids + rings for each jar (lids are single-use for canning).
- Jar lifter, funnel, bubble tool, magnetic lid lifter.
- Sharp knife or fish shears for cleaning/portioning fish.
- Kitchen scale for consistent portioning.
Preparing the fish
Clean, gut, and rinse
Whole fish: scale, gut, remove head, tail, and fins. Rinse thoroughly under cold water. Pat dry with paper towels.
Cut to jar size
Cut fish into chunks that fit vertically in your jar with 1 inch headspace. Typical: 3-4 inch pieces for pint jars, 2-3 inch pieces for half-pint jars. Skin can be left on (adds omega-3 fatty acids to final product) or removed (personal preference).
Bones — leave in
Fish bones soften completely during pressure canning and become edible (like commercial canned salmon). They add calcium to the finished product. Removing bones adds work and no safety benefit. Just leave them in.
Pack style — raw pack vs hot pack
Fish is canned raw-pack (uncooked before jarring, cooked during processing). Hot-packing fish before canning tends to produce over-cooked mushy final product.
Raw-pack method
- Sanitize jars and lids in hot water. Do not need to sterilize (pressure canner does that during processing).
- Pack raw fish pieces into jars, skin against the glass if desired for presentation. Pack tightly but do not crush.
- Leave 1 inch headspace.
- Add salt if desired: 1/2 tsp per half-pint, 1 tsp per pint. Salt is for flavor only, not preservation.
- Do NOT add liquid — fish releases enough liquid during processing to fill the jar naturally.
- Wipe rims clean, apply lid + ring, finger-tight.
Pressure canning process
- Add 3 inches of water to the canner base (with rack).
- Place jars on the rack. Do not stack.
- Lock the canner lid. Bring to a boil with the pressure regulator off; let steam vent out the vent tube for 10 minutes (this removes air from the canner).
- After 10-minute vent, put weight/pressure regulator on. Bring canner to processing pressure:
- Dial gauge: 11 PSI at 0-2,000 ft; 12 PSI at 2,001-4,000 ft; 13 PSI at 4,001-6,000 ft; 14 PSI above 6,000 ft.
- Weighted gauge: 10 PSI at 0-1,000 ft; 15 PSI above 1,000 ft.
- Once at pressure, start timing. Process:
- Half-pints: 100 minutes.
- Pints: 100 minutes.
- Quarts: NOT APPROVED. Do not use quart jars for fish.
- Turn off heat when processing complete. Let canner cool naturally — do NOT force cool. Wait until pressure gauge reads zero (about 45-60 minutes).
- Remove weight/regulator, wait 10 more minutes, then unlock and open lid (steam side away from face).
- Remove jars with a jar lifter. Set on a towel-covered surface, undisturbed, 24 hours.
Verifying seals
After 24 hours: press each lid center. If it doesn’t flex, seal is good. If it flexes, refrigerate and eat within a week (or reprocess with new lid within 24 hours).
Store sealed jars in a cool (below 75°F), dark pantry. Remove rings for storage (prevents rust; also lets you spot a broken seal — un-ringed lid pops off if seal fails).
Shelf life
Properly sealed home-canned fish: 2-5 years at peak quality; safe longer if seal remains intact. Best consumed within 2 years for best texture and flavor. Store 50-70°F, dark.
Salmon-specific notes
Salmon is the most-canned fish at home because it’s a runoff catch (limited fresh-eating window) and canning preserves the flavor beautifully. Skin-on canning creates the classic pink presentation. Salt is optional; smoked salmon (light cold-smoke pre-canning) creates an outstanding product. Wild sockeye and coho are the traditional choices; farmed Atlantic works but yields softer texture.
Tuna-specific notes
Fresh tuna cans well. Pre-brine (1 hour in 3% salt water) for cleaner flavor. Yellowfin, albacore, and bluefin all work. Pint jars only — larger cuts don’t penetrate heat adequately.
Trout, mackerel, and other freshwater fish

Light cold-smoke (below 90°F) before canning creates smoked canned salmon that’s a delicacy. Do not attempt to can hot-smoked fish that’s already fully cooked — texture becomes rubbery. Cold-smoke, then pack raw into jars, then pressure can.
Safety mistakes to never make
- Water bath instead of pressure can. Not safe for fish. Ever. No exceptions.
- Quart jars. Heat penetration inadequate. Half-pints and pints only.
- Adding liquid to the jar. Fish creates its own liquid. Added liquid affects heat penetration and processing time.
- Skipping the 10-minute vent step. Air trapped in the canner insulates jars, produces under-processed food.
- Force-cooling the canner (running water, opening early). Can crack jars, break seals, or worse.
- Reprocessing already-canned fish that failed to seal. Better to eat the failed batch within a week from the fridge than reprocess (over-processing destroys texture).

FAQ
Can I can fish in glass jars in the oven or slow cooker? No. Oven “canning” is unsafe (uneven heating, no reliable temperature control). Slow cookers don’t reach 240°F required for botulism spore kill. Pressure canner only.
