How to Make Jams and Jellies at Home (Water Bath Canning)

Home-canned jam is one of the friendliest entry points to canning. It’s water-bath processing (no pressure canner needed), the recipes are forgiving on flavor, and a batch takes an afternoon start to finish. A good strawberry, peach, or blackberry jam from your own kitchen tastes lightyears better than the corn-syrup-sweetened jars at the grocery store, and it costs less than half the price when fruit is in season.

Jam vs jelly vs preserves vs marmalade
Some quick definitions since the words get mixed up:

- Jelly: strained fruit juice + sugar + pectin, cooked to set. Clear, no pulp.
- Preserves: whole or large chunks of fruit suspended in a heavy sweet syrup. Chunkier than jam.
- Marmalade: citrus fruit + peel + sugar + pectin. British institution; usually oranges or lemons.
All four are canned the same way — water bath, similar processing times. Ingredient prep differs.
Pectin — the set variable
Pectin is the substance that turns cooked fruit juice into a spreadable gel. Some fruits are naturally high in pectin (apples, quinces, tart citrus, cranberries) and set without added pectin. Others are low (strawberries, peaches, raspberries) and require added commercial pectin to set properly.
Commercial pectin options:
- Regular powdered pectin (Sure-Jell yellow box, Ball Classic): requires high sugar ratios (7 cups sugar to 5 cups fruit is typical). Traditional, reliable.
- Low/no-sugar pectin (Sure-Jell pink box, Pomona’s Universal Pectin): sets with less sugar or with alternative sweeteners (honey, sugar substitute). More flexible.
- Liquid pectin (Certo): added at the end of cooking. Different recipe format from powder.
Cannot substitute one type for another 1:1 — different products, different sugar/acid/cooking requirements. Follow the recipe on the pectin package OR use a tested recipe matching your pectin type.
Equipment
- Large heavy-bottomed pot: 8+ quart, wide (jam boils up substantially).
- Water bath canner or stockpot with rack: a 21-quart water bath canner is standard.
- Half-pint or pint mason jars, new lids, bands.
- Jar lifter, funnel, ladle, bubble tool. Standard canning kit.
- Thermometer or plate test setup: for judging set point.
- Potato masher or immersion blender: for crushing fruit to jam consistency.
Basic strawberry jam (regular pectin)
The classic. Ratio: 5 cups crushed strawberries : 7 cups sugar : 1 box (1.75 oz) Sure-Jell.
- Hull and crush strawberries with a potato masher (do not puree — leave some texture).
- Combine berries and pectin in a large pot. Bring to a hard rolling boil, stirring constantly.
- Add all 7 cups sugar at once. Return to a hard rolling boil that cannot be stirred down. Boil exactly 1 minute.
- Remove from heat. Skim any foam with a metal spoon.
- Ladle into hot half-pint jars, 1/4 inch headspace. Wipe rims, apply lids, finger-tight bands.
- Process in boiling water bath for 10 minutes (add 5 min for 1,001-6,000 ft altitude, 10 min above 6,000 ft).
Low-sugar peach jam (Pomona’s pectin)
For those who want less sugar. Ratio: 4 cups peeled crushed peaches : 2 cups sugar (or honey) : 2 tsp calcium water : 2 tsp Pomona’s pectin.
- Calcium water: mix the calcium powder (in the Pomona’s box) with 1/2 cup water. Store in fridge for future batches.
- Combine peaches, lemon juice (2 tbsp), and calcium water in pot. Heat to boiling.
- In a separate bowl, mix sugar and Pomona’s pectin thoroughly.
- Add sugar/pectin mix to boiling fruit. Stir vigorously 1-2 minutes to dissolve. Return to a boil.
- Ladle into half-pint jars, 1/4 inch headspace. Water bath 10 minutes.
Testing for set — the plate test
Before jarring, test set. Put 2-3 small plates in the freezer before starting. When jam looks close to done, drop a spoonful on a chilled plate. Wait 30 seconds. Push with a fingernail — if the surface wrinkles and holds a line, it’s set. If it flows back together, cook 1-2 minutes more and retest.
Thermometer alternative: cooked jam reaches 220°F at sea level (drops 2°F per 1,000 ft altitude). Adjust for altitude.
Processing and sealing
All jam and jelly recipes: water-bath process 10 minutes at sea level. Add time for altitude:
- 1,001-3,000 ft: 15 minutes
- 3,001-6,000 ft: 20 minutes
- 6,001-8,000 ft: 25 minutes
- 8,001+ ft: 30 minutes
Cool jars undisturbed 24 hours on a towel. Test seals — press center of lid, if it doesn’t flex, seal is good. Refrigerate any that failed to seal and use within 3 weeks.
Shelf life and storage

Common problems and fixes
- Jam didn’t set: Usually a pectin issue (wrong type for recipe, insufficient boil time, or overripe fruit low in pectin). Fix: re-cook with additional pectin (many pectin brands publish “no-set jam rescue” instructions on their website).
- Jam is too stiff/rubbery: Overcooked past set point, or too much pectin. Next batch: pull off heat sooner, test earlier.
- Sugar crystals formed in the jar: Old sugar or too-high sugar ratio for the fruit. Prevention: dissolve sugar completely before boiling.
- Mold on top: Broken seal or poor jar hygiene. Discard the jar. Check other jars from that batch.
- Cloudy jelly: Ran the jelly through a bag too aggressively (pushed pulp through). Next time let it drip without squeezing.
Reducing sugar safely
Traditional jam recipes are ~65% sugar by weight. That’s necessary for regular pectin to set AND for shelf stability. You cannot arbitrarily reduce sugar in a regular-pectin recipe — the jam either won’t set or will spoil.
To make lower-sugar jam safely: use low-sugar pectin (Sure-Jell pink box, Pomona’s) with a tested recipe designed for reduced sugar. These pectin products contain calcium activators that let the jam set with much less sugar. Never freelance sugar reduction.
What NOT to do
- Do not double the recipe. Jam doesn’t scale — larger batches don’t reach set temperature evenly, and the extra volume affects processing time. Make single batches back-to-back if you need volume.
- Do not use paraffin wax to seal jars. Old-timey practice, discontinued because it doesn’t seal reliably enough. Water bath and mason jar lids only.
- Do not can jam in jars larger than pint. Larger jars don’t heat through quickly enough at the water bath processing times specified.
- Do not skip the water bath step (“upside-down jar sealing”). The heat processing kills mold spores; upside-down technique alone is insufficient.
Cost math
A flat of strawberries (12 pints ~$25 in season) yields about 8 half-pint jars of jam. Sugar, pectin, jars, lids add ~$8 total. Cost per half-pint: ~$4. Compare to $6-$9 for a comparable-quality artisan jam at a farmers market or specialty grocery.
