Fruit flies

Mold on SCOBY surface
Fuzzy dark spots (black, blue, green) = mold. Throw everything out — the SCOBY, the kombucha, the jar (or wash with vinegar and bleach). Start over with new SCOBY. Common causes: contaminated starter, too-cool fermentation, poor sanitation.
Brown strings and yeast blobs hanging from SCOBY = NOT mold, just yeast colonies. Perfectly normal.
Weak carbonation in F2
Warmer room temperature, longer F2, more fruit sugars, or airtight flip-top bottles (weakly-sealed bottles vent CO2).
Bottles exploded during F2
Over-carbonated. Refrigerate F2 sooner, add less fruit/sugar, or use pressure-rated bottles only. Never use glass containers not rated for carbonation.
Continuous brewing setup (advanced)
Instead of full batches every 1-2 weeks, continuous brewing uses a 2+ gallon vessel with spigot. You drain 20-30% of the kombucha at a time and replace with fresh sweet tea. The SCOBY stays in place indefinitely.
