Signs Your Home-Canned Food Has Spoiled (and the Botulism Rules That Matter)

There is one sentence that causes more botulism cases than any other in home canning: the jar sealed, so it must be fine.

A vacuum seal proves the jar is airtight. It does not prove the jar ever got hot enough. And an airtight, low-acid, room-temperature jar is precisely the environment Clostridium botulinum requires — the seal is not evidence against botulism, it is one of the conditions for it.

This is the reference for what spoilage actually looks like, which signs mean nothing, which mean stop, and exactly what to do with a jar you do not trust. Every figure below traces to USDA, NCHFP, CDC, or a university Extension service.

What you are actually guarding against

C. botulinum exists in two forms. USDA describes spores as “comparable to plant seeds” — they survive harmlessly in soil and water for years. When conditions are right the spores produce vegetative cells that multiply and “may produce a deadly toxin within 3 to 4 days of growth.”

USDA lists three conditions required for toxin production:

  • a moist, low-acid food
  • a temperature between 40°F and 120°F
  • less than 2 percent oxygen

The dividing line is pH 4.6. Low-acid foods sit above it: red meats, seafood, poultry, milk, and all fresh vegetables except most tomatoes. Acid foods sit at or below it: fruits, pickles, sauerkraut, jams, jellies. Tomatoes and figs must be acidified with lemon juice or citric acid to get there.

The sentence that makes this click, from USDA: “Botulinum spores are on most fresh food surfaces. Because they grow only in the absence of air, they are harmless on fresh foods.” The spores are already on your produce. They are harmless in the garden and dangerous in a sealed jar.

Spores need 240°F to 250°F to destroy — attainable only in a pressure canner. Boiling water tops out at 212°F and cannot exceed it at any duration. The toxin, by contrast, is a protein and is destroyed by heat far more easily.

Why “it sealed” proves nothing

Three authorities say this directly, and it is worth reading all three.

USDA: “If Clostridium botulinum bacteria survive and grow inside a sealed jar of food, they can produce a poisonous toxin. Even a taste of food containing this toxin can be fatal.”

Penn State Extension: “The conditions inside a jar of home canned food are the perfect environment for the spores to emerge from their survival pod and grow into the living form of the bacteria. During that growth process, a deadly toxin, or poison, is produced.”

Colorado State: “Anaerobic conditions develop when food is canned. If the food is not heated enough to kill the spores of Clostridium botulinum, the spores will germinate and grow during subsequent storage.”

A seal is a processing outcome. It tells you the lid formed a vacuum. It says nothing about whether the center of the jar reached a lethal temperature for a lethal duration.

The inspection routine

NCHFP gives this as a sequence rather than a checklist, and the order matters:

“As each stored jar is selected for use, examine its lid for tightness and vacuum. Lids with concave centers have good seals.

Next, while holding the jar upright at eye level, rotate the jar and examine its outside surface for streaks of dried food originating at the top of the jar. Look at the contents for rising air bubbles and unnatural color.

While opening the jar, smell for unnatural odors and look for spurting liquid and cotton-like mold growth (white, blue, black, or green) on the top food surface and underside of lid.”

CDC’s shorter list of contamination signs: the container is leaking, bulging, or swollen; looks damaged, cracked, or abnormal; spurts liquid or foam when opened; or the food is discolored, moldy, or smells bad.

A tip worth adopting: NCHFP notes twice that you can more easily detect spoilage in jars stored without screw bands. Spoilage organisms produce gas, which swells lids and breaks seals — but a band left on holds a failing lid in place and hides the evidence. Take the bands off after the jars cool.

Red flags versus signs that mean nothing

This distinction is where most guidance fails people, sending them either to needless panic or false confidence. NCHFP labels each defect explicitly.

Stop — treat as spoiled:

  • Unsealed or loose lid
  • Swollen or bulging lid, or a lid without a concave center
  • Leaking, or dried food streaks running down from the jar top
  • Rising air bubbles in the contents
  • Liquid or foam spurting on opening
  • Mold of any color, on the food or the underside of the lid
  • Any off or unnatural odor

Not spoilage signs — NCHFP says so explicitly:

  • Liquid loss during processing — labeled “(Not a sign of spoilage).” Normal siphoning. NCHFP adds: do not open the jar to top up the liquid.
  • Food darkened at the top of the jar — “(not necessarily a sign of spoilage).” Usually oxidation from trapped air or insufficient liquid coverage.
  • Floating fruit — a packing and density issue, not a safety one.
  • Texture softening — a quality change from long or warm storage. Utah State is explicit that these products remain safe to eat.

Ambiguous — cannot be cleared by looking: cloudy liquid and sediment both have benign causes (starch from vegetables, minerals in water, anti-caking additives in table salt) and spoilage causes. NCHFP labels cloudy liquid “(sometimes denotes spoilage).”

Which brings us to the reason ambiguity cannot be resolved by inspection at all.

The toxin can be present with no signs whatsoever

This is the single most important fact in home canning, and it is why every other rule exists.

USDA: “Spoiled low-acid foods, including tomatoes, may exhibit different kinds of spoilage evidence or very little evidence. Therefore, all suspect containers of spoiled low-acid foods, including tomatoes, should be treated as having produced botulinum toxin.”

CDC: “You cannot see, smell, or taste the toxin that causes botulism. But taking even a small taste of food containing the toxin can be deadly.”

Penn State: “When a person eats food containing the botulism toxin, the food will look and taste normal.

Colorado State explains why the smell test fails inconsistently, which is the detail that makes it stick. Proteolytic strains of types A, B, and F digest proteins and produce a foul odor that may warn you. Nonproteolytic B, E, and F strains do not: “no off-odor or evidence of spoilage may be produced with toxin development.

So a jar can smell fine because the organism in it does not make smells. That is not reassurance. It is a coin flip you were not told you were making.

Never taste to test

Every authority uses the same flat language.

USDA: “Do not taste food from a jar with an unsealed lid or food that shows signs of spoilage.” CDC: “Never taste food to see if it’s safe.” Penn State: “Never taste a food you suspect is spoiled. If in doubt, throw it out.” UMaine: “never taste food from a jar with an unsealed or rusty lid.”

There is no small, careful, cautious taste. USDA: “Even a taste of food containing this toxin can be fatal.”

The boiling rule, and exactly what it covers

Botulinum toxin is heat-labile. USDA: “Boiling food 10 minutes at elevations below 1,000 feet should destroy this poison when it is present. For elevations at and above 1,000 feet, add 1 additional minute per 1,000 feet additional elevation.”

USDA also defines boiling, because people confuse it with simmering: “you are able to see the liquid in the food actively forming large foamy bubbles that break all over the surface.”

CDC applies the 10-minute boil categorically to all low-acid home-canned foods and all home-canned tomatoes. USDA requires it for any low-acid or tomato food not canned according to USDA recommendations, and permits eating without boiling only when you can affirm all of the following: processed in a pressure canner per USDA procedures, with an accurate gauge, using current researched times and pressures for that jar size and food, adjusted for your elevation, with a firm vacuum seal, nothing leaked, no liquid spurted on opening, no off odors, and no mold.

The workable rule: boil unless you can personally certify every one of those conditions. CDC’s blanket version is the conservative default and it is the one to follow if you are uncertain.

Two limits you must not blur:

  • Boiling destroys the toxin. It does not destroy spores. Spores need 240–250°F.
  • Boiling is not a rescue for bad canning. USDA states plainly that this is “not intended to serve as a recommendation for consuming foods known to be significantly underprocessed” and is “not a guarantee that all possible defects and hazards with other methods can be overcome.”

And for a jar you already suspect, the boiling rule does not apply at all. CDC’s instruction is discard. NCHFP flags this directly: as of July 2013 CDC’s recommendation is to discard any home-canned food that might contain botulism toxin.

How to dispose of a suspect jar

USDA gives two routes depending on the jar’s condition. Follow them exactly — this is not a place for improvisation.

If the jar is still sealed

Do not open it. Place it in a heavy garbage bag, close the bag, and put it in a trash container or take it to a landfill. Keep it away from children and animals.

If the jar is unsealed, open, or leaking — detoxify first

  1. Put on disposable rubber or heavy plastic gloves.
  2. Place the containers and their lids on their sides in an 8-quart or larger stock pot or boiling-water canner.
  3. Wash your gloved hands thoroughly.
  4. Add water carefully, avoiding splashing, until it covers the containers by at least 1 inch.
  5. Put a lid on the pot and bring to a boil.
  6. Boil 30 minutes.
  7. Cool, then discard containers, lids, and food in the trash or a landfill.

This is a disposal step, not a rescue. USDA’s own instruction after the 30-minute boil is to discard everything.

Decontaminating the area

USDA is specific, and the ratio is much stronger than routine sanitizing:

Use a fresh solution of 1 part unscented liquid household chlorine bleach (5 to 6% sodium hypochlorite) to 5 parts clean water. Spray or wet contaminated surfaces and let stand 30 minutes. Wearing gloves, wipe up with paper towels, minimizing spread. Put those paper towels in a plastic bag before the trash. Then apply the bleach solution again, let stand another 30 minutes, and rinse. Wash everything thoroughly afterward and discard the gloves.

Treat can openers and clothing as contaminated. And note the route of exposure: USDA warns that “contact with botulinum toxin can be fatal whether it is ingested or enters through any openings in the skin.

If someone has eaten it

CDC’s symptom list: difficulty swallowing, muscle weakness, double vision, drooping eyelids, blurry vision, slurred speech, difficulty breathing, difficulty moving the eyes. Foodborne cases may also bring vomiting, nausea, stomach pain, or diarrhea.

Onset is typically 18 to 36 hours, though it can appear as early as 6 hours and as late as 10 days. Colorado State adds a useful detail: fever is absent early in the disease, which helps distinguish it from ordinary food poisoning.

CDC: “Botulism is a medical emergency. If you or your child has signs and symptoms of botulism, immediately see your doctor or go to the emergency room. Do not wait.”

About 5% of patients die even with modern intensive care and antitoxin. Survivors commonly need weeks of mechanical ventilation and months of rehabilitation.

What actually causes the risk

Botulism in home-canned food is almost always traceable to a specific, avoidable error:

  • Water-bath canning low-acid foods. The leading cause. NCHFP: pressure canning is “the only recommended method” for meat, poultry, seafood, and vegetables.
  • Open-kettle canning — filling hot jars and letting them self-seal without processing.
  • Oven, microwave, or dishwasher “canning.”
  • Unapproved recipes, or altering tested ones by adding vegetables, thickeners, or fat.
  • Skipping tomato acidification.
  • Ignoring altitude adjustments.
  • Reusing flat lids. Jars and bands are reusable; flat lids are single-use.
  • Dry canning without the required liquid, which prevents proper heat penetration.

Storage, and the difference between safety and quality

NCHFP: label and date jars and store them “in a clean, cool, dark, dry place.” For best quality, store between 50 and 70°F. Do not store above 95°F or near hot pipes, a range, a furnace, in an uninsulated attic, or in direct sunlight — under those conditions “food will lose quality in a few weeks or months and may spoil.”

Dampness matters more than people realize: it “may corrode metal lids, break seals, and allow recontamination and spoilage.” That is the mechanism by which a jar that was safe becomes unsafe in storage.

On shelf life: “for best quality, can no more food than you will use within a year.” That is a quality rule, not a safety cliff. Utah State is explicit that food stored longer or warmer loses quality and some nutrients but remains safe to eat.

Accidental freezing will not cause spoilage unless jars unseal, though it may soften texture.

My jar looks and smells completely normal but I water-bath canned green beans. Is it safe? No, and this is exactly the scenario the rules exist for. Low-acid vegetables processed in boiling water were never heated above 212°F, so spores survived. Normal appearance and smell tell you nothing. CDC’s guidance for food you cannot confirm was canned safely is to discard it.

What if only one jar in the batch looks wrong? Treat the whole batch as suspect. Spore distribution is patchy and unpredictable — a batch that produced one visibly bad jar was processed identically to the rest, and the others may be contaminated without showing it.

Can I feed questionable canned food to livestock or compost it? No. Botulinum toxin affects animals, and composting does not reliably destroy it. Follow the disposal procedure above and put it in the trash where animals cannot reach it.
